CREAM FILLED CUPCAKES 
2 1/2 c. flour
1 tsp. baking powder
2 c. sugar
1/3 c. cocoa
1/4 tsp. salt
2 eggs
1 c. oil
1 c. milk
1 tsp. vanilla
2 tsp. baking soda
1 c. hot water

Mix dry ingredients. Add eggs, oil, milk and vanilla. Beat 1 1/2 minutes. Combine soda and water. Add to rest of ingredients. Bake at 350 degrees for 20 minutes. Makes 40 cupcakes

FILLING:

1/2 c. sugar
1/3 c. milk
2/3 c. butter
1/4 tsp. salt
1 tbsp. water
1 tsp. vanilla

Beat on high speed for 5 to 7 minutes. Add 1/2 cup powdered sugar and beat 5 minutes longer. Force into cupcakes. Store in cool place.

I was only making 12 cupcakes so I cut the recipe in half and it was too sweet for my taste so I added about 1/4 cup vegetable shortening and it was perfect! I still had too much so next time I'll fill the cupcakes with more of it. Yummy!!
