APPLE CINNAMON MUFFINS 
1/2 c. butter
3/4 c. white sugar
1 egg, beaten
1 c. buttermilk (canned powder)
1 tsp. salt
1 1/2 c. diced apples
1 c. all purpose flour
3/4 c. whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon

TOPPING:

1 tsp. cinnamon
2-3 tbsp. sugar

Blend butter, sugar, egg until smooth. Add buttermilk, salt and apples and mix well. Stir together flour, soda, cinnamon and stirring only to moisten. Spoon into greased muffin cups and sprinkle with topping. Bake at 375 degrees for 20 minutes. Yield: 12 muffins.
