APPLE CINNAMON MUFFINS 
1 1/2 c. flour
1/3 c. sugar
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 egg (egg substitute)
1/2 c. milk (may use skim)
1 c. apple, peeled, cored and chopped
1/4 c. butter, melted
1/4 c. brown sugar, firmly packed

Combine flour, sugar, baking powder, 1/2 of the cinnamon, and salt in large bowl. Beat egg with milk in separate bowl. Stir in apple and butter. Add to flour mixture and stir until just moistened (batter will be stiff). Fill twelve 2 1/2" muffin cups. Combine brown sugar and remaining cinnamon and sprinkle over top. Bake at 375 degrees for 15 to 20 minutes. Remove from pan at once. Serve warm.
