POTATO PANCAKES 
Approx. 1/2 lb. baking potatoes
1/4 c. half and half
4 tbsp. flour
1 lg. egg
2 tbsp. finely chopped onion
1/2 tsp. salt
1/4 tsp. baking powder
Vegetable oil for brushing into griddle

Heat griddle or skillet over moderate heat. In food processor puree potato, peeled and cut into 1" pieces, with half and half, flour, egg, onion, salt and baking powder. Transfer to small bowl. (Puree will not be smooth.) Brush griddle with oil and spoon in batter in level tablespoons onto the griddle spreading it to form pancakes 3" in diameter. Cook pancakes for approximately 1 minute, or until undersides are golden brown. Turn them over with metal spatula and cook another 1 minute or so.
