HEALTHY BRAN MUFFINS 
1 1/2 c. unprocessed bran (from Health Food Store)
2 c. whole wheat flour
2 tbsp. sugar
1/4 tsp. salt
1 1/4 tsp. baking soda

1 egg
2 c. sour milk (milk can be soured by adding 2 tbsp. white vinegar)
1/2 c. molasses
2 tbsp. melted butter

Combine dry and liquid ingredients with a few strokes. Fold in 1 cup or more raisins and nuts if desired. Bake muffins in moderate oven at 350 degrees for 25 minutes.

Makes 18 muffins.
