FRUIT MUFFINS (HEALTHY SNACK) 
1 egg
1/2 c. vegetable oil
3/4 c. milk
2 c. wheat flour
1/3 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. chopped fruit (peaches, apples, prunes)
1/2 c. brown sugar (optional)

Heat oven to 400 degrees. Use muffin cups or grease bottoms of muffin pans. Beat egg. Stir in oil, milk and fruit. Stir in remaining ingredients all at once, just until moistened. Batter will be lumpy. Fill muffin cups 3/4 full. Bake until golden brown, about 20 minutes.

The muffins taste really good. Well we didn't have all the stuff so we substituted vegetable oil with extra virgin olive oil and only had an apple (not anything else). I liked the crispness on the muffins but I'm not sure if it was crisp because of the brown sugar or something else? But the muffins were really good when my sister made them!

We made this recipe with fresh strawberries and they were delicious. I mixed wet ingredients and dry ingredients separately. I stirred in the dry ingredients a little at a time and the batter was not lumpy at all. The muffins came out perfect. Great recipe.

This easy muffin recipe is AWESOME! I used the brown sugar instead of the white sugar and put in a combination of apples and peaches. Great for lunch box snack!
