FRUIT OATMEAL MUFFINS 
1 1/4 c. oatmeal
1 c. flour
1/3 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 c. milk
2 egg whites
1/4 c. oil
2/3 c. fruit (blueberries, bananas or chopped apple)

Combine dry ingredients. Add milk, egg, oil and fruit. Mix together. Bake in lined muffin tins at 425 degrees for 15 to 20 minutes.
