BANANA NUT AND FRUIT MUFFINS 
1 c. sugar
2 eggs
1 c. mashed ripe bananas (2 lg. bananas)
1 tsp. baking soda, dissolved in a little hot water
1 tsp. vanilla
1/2 c. butter, melted
1 1/2 c. sifted all-purpose flour
1/2 c. chopped pecans
1/2 c. seedless dark raisins
1/2 c. flaked coconut

Preheat oven to 400 degrees. In a large bowl, beat together sugar, eggs, bananas, baking soda and vanilla until smooth. Add melted butter; beat well. Add flour, all at once, and beat until smooth. Stir in nuts, raisins and coconut with spoon. Place batter in paper-lined muffin cups. Bake at 400 degrees for 20 minutes or until test done. Makes 18 muffins.
