WHOLE WHEAT BANANA MUFFINS 
1 c. (3 med.) bananas, mashed
1/3 c. butter or margarine, melted
1/2 c. brown sugar
1/2 c. honey
2 eggs, beaten
1 3/4 c. whole wheat flour
1/2 tsp. salt
1 tsp. baking soda
1/4 c. hot water
1/2 c. nuts, chopped (optional)

Beat butter and honey together. Add eggs, mix well. Stir in bananas. Add sifted dry ingredients alternately with hot water; mix until smooth.

Bake in greased muffin pan at 400°F for 15 minutes. Makes 12 large muffins. An after - school favorite! (Frozen Bananas: Peel and freeze unused ripe bananas for later use.)

These were awesome! I added cinnamon, used pecans for the nuts, and puréed the bananas. Not to sweet and have a great flavor!
