FRUIT MUFFINS 
1 c. white flour
1 tbsp. baking powder
1/2 tsp. salt
3/4 c. whole wheat or graham flour
1 egg
1/2 c. apple juice concentrate
1/4 c. vegetable oil
1/2 c. milk
1 banana, sliced

Sift together first 4 ingredients. Add whole wheat or graham flour and stir together in a large bowl. In a blender blend together the egg, apple juice concentrate, vegetable oil, milk and banana slices. Pour liquid ingredients into dry ingredients and stir together.

Spoon into muffin tins that have been generously greased or lined with paper cups. Bake at 400 degrees for 20-25 minutes. (Makes 12 muffins.)

Variations: Add 1 cup chopped fresh or canned fruit to mix before filling muffin cups. Peach and blueberry are especially good.
