FRUIT AND GRAIN MUFFINS | |
2 c. unbleached all purpose flour 1 c. crushed cereal (Cheerio's, Nutri-Grain, Oatmeal or blended cereals) 1/2 c. sugar 3 tsp. baking powder (Rumford) 1 tsp. baking soda 1 tsp. cinnamon 3 well beaten eggs 1/2 c. vegetable oil 1 c. (8 oz.) vanilla yogurt 1/2 c. skim milk (optional) 2 tbsp. honey or baking molasses 1 c. chunky chopped fruit (apricots, dates, berries) 3/4 c. cooked, mashed winter squash (optional) Preheat oven to 400 degrees. In large bowl blend flour, sugar, cereals, spices, baking powder, and soda. Blend liquid ingredients in separate bowl, blend well. Stir liquid ingredients, including squash and chopped fruit, into dry ingredients. Blend well. Spoon into very well greased muffin tin about 3/4 full. Bake 20 to 25 minutes until done (until toothpick inserted in center comes out clean). Makes about 2 dozen medium sized muffins. |
