SPINACH AND ARTICHOKE CASSEROLE 
2 (10 oz.) pkg. frozen chopped spinach
1 can artichoke hearts
1 (3 oz.) pkg. cream cheese
1 stick butter, plus a little extra
1 tbsp. lemon juice
Bread crumbs or cracker crumbs

Cook and drain spinach. Grease an oblong casserole dish and line with artichoke hearts, cut up into small pieces. Melt 1 stick butter and cream cheese in saucepan; this mixture will be lumpy. Add spinach to butter/cheese mixture. Add salt and pepper to taste. Layer the spinach mixture on top of the artichoke pieces. Sprinkle with lemon juice. Dot with butter and top with crumbs. Bake at 350 degrees until hot.
