WATERMELON SALAD 
4 cups seedless watermelon, cut in bite size pieces
1 English cucumber, cut in chunks
3 green onions, sliced diagonally in 1-inch pieces
1/4 cup Feta cheese, crumbled (optional)

DRESSING:

1/4 cup vinegar
1/2 cup white sugar
1/2 cup extra virgin olive oil (EVOO)
1 tsp. salt
1/4 small red onion, chopped
1 tsp. dry mustard
2 tbsp. water

Place watermelon, cucumber, onions and Feta (if using) in a bowl.

Combine vinegar, sugar, olive oil, salt, onion, mustard and water in blender and blend until well mixed. Refrigerate.

Just before serving add dressing to salad and gently toss until everything is well coated and evenly mixed.

Serves 4 to 6.
