HOMINY GRITS PIE 
3 eggs
1 c. cooked grits
1/2 c. light brown sugar
1/3 c. heavy cream
1 unbaked 8-9-in. pie shell
1/2 c. fresh berries or sliced fruit, optional

Preheat the oven to 400 degrees. Put the eggs in a mixing bowl and beat until blended and smooth. Stir in the grits, sugar and cream and mix until blended. Pour the mixture into the pie shell and gently stir in the berries or fruit if you are using them.

Bake for about 40 minutes or until the center is a trifle jiggly, but most of the filling is set. Cool for 5 minutes after removing from the oven. Serve warm or cold.
