ZESTY SALTINE MEATLOAF 
1 1/2 lb. ground beef
1 c. coarse Keebler Zesty Saltine Crackers
1/3 c. chopped onion
1/4 c. milk
1 egg
1/4 c. ketchup
1 tsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
1 c. shredded cheddar cheese

In large mixing bowl, combine ground beef, 1/2 cup cracker crumbs, onion, milk, egg, 1/4 cup ketchup, Worcestershire sauce, salt, and pepper; blend thoroughly. Place mixture on large piece of waxed paper. Cover with another piece of waxed paper and roll out to rectangle about 9 x 15 inches. Remove top sheet of paper. Combine remaining cracker crumbs and cheese. Sprinkle over meat mixture. Beginning with 9 inch side, roll up jelly roll fashion, using waxed paper to help roll. Place in 9 x 5 inch loaf pan. Spread additional ketchup over top. Bake in preheated 350 degree oven for 1 to 1 1/4 hours.

My boyfriend loves this. He says its the best thing ive ever cooked. One note though. The type of ketchup you use changes the recipe ENTIRELY. Hunts works best for me, its the zestiest!

I didn't have any saltines, so I substituted the Multi-Grain crackers I bought at Costco. Yum!
