DEEP DISH APPLE AND CHEESE PIE 
7 cooking apples, cored & sliced (6 c.)
1/2 c. + 3 tsp. sugar, divided
2 tbsp. flour
1 tsp. cinnamon, divided
1/4 tsp. nutmeg
3/4 c. shredded cheddar cheese
1 c. cake flour
1 1/4 tsp. baking powder
3/4 tsp. salt
2 tbsp. butter
1/3 c. milk

In large bowl, combine apples, 1/2 cup sugar, flour, 1/2 teaspoon cinnamon and nutmeg; blend well. Pour into a 10"x2" microwave safe deep dish pie plate. Sprinkle with cheese; set aside.

In separate bowl, combine cake flour, baking powder, salt, 1 1/2 teaspoons of the sugar and butter until fine crumbs form. Add milk; stir until dough forms a ball. Roll out on floured surface to 11" circle. Fit over apples and cheese. Pinch edges; prick top with fork. Combine remaining sugar and cinnamon. Sprinkle over top of crust. Cook on high 10 to 12 minutes or until apples are tender and pastry looks dry and blistered. Serve warm or cool.

Since microwave ovens vary in power, you may need to adjust your cooking time.
