DEEP DISH SALMON CHEESE PIE 
1 tbsp. finely chopped onion
2 tbsp. butter, or butter
1/4 c. Bisquick
1 1/2 c. milk
1 c. shredded sharp cheddar cheese
1 can (1 lb.) salmon, drained and broken into small pieces
1/8 tsp. black pepper
1/2 recipe Bisquick dough

Heat oven to 450 degrees. Grease 1 1/2 quart casserole. In large skillet, cook and stir onion in butter until onion is tender. Remove from heat blend in Bisquick. Cook over low heat, stirring until mixture is bubbly. Remove from heat. Then, stir in milk and heat to boiling, stirring constantly. Boil and stir for 1 minute. Stir in cheese until melted.

Next, fold in salmon and add pepper. Pour mixture into prepared casserole. Bake for 10 minutes.

Prepare 1/2 recipe Bisquick dough. Roll dough to fit top of casserole. Cut slits in Bisquick topping and place on hot salmon mixture. Bake about 10 minutes longer, or until topping is golden brown. Serves 4 to 6.
