OVERNIGHT EGG CASSEROLE 
6 eggs
3 c. milk
1/2 tsp. salt
1/4 tsp. pepper
12 slices bread
1 1/3 c. sharp cheddar cheese, grated
2 c. diced ham

Trim crusts on bread, butter and cube. Beat eggs, milk and seasoning. Layer bread cubes, cheese and ham in 9"x13" glass baking dish. Pour egg mixture over all. Cover. Refrigerate overnight. Bake, uncovered at 350 degrees for 55 minutes. Let stand 5 minutes and cut into squares.

This is one of the recipes my mother put together in a 9-inch glass pie plate when she first bought a microwave. She makes toast first, then butters it, then adds meat, cheese, egg mixture, etc. and "cooks" it about 5-10 minutes or until egg is set and serves it like a quiche. I like it because it's lighter than pizza but hearty enough to eat as a meal with some fruit or a salad. Also, it travels well. Pat
