“CRISP PICKLES SLICES” IS IN:
NEXT RECIPE:  CROSSCUT PICKLE SLICES

CRISP PICKLES SLICES 
6 lb. medium cucumbers
6 medium white onions
3 cloves garlic, peeled
1 green pepper
1 red sweet pepper
1/3 cup canning salt
3 cups sugar
1 1/2 tsp. turmeric
1 1/2 tsp. celery seed
3 cups white vinegar
2 tablespoons mustard seed

Wash and thinly slice unpeeled cucumbers. Measure out 4 quarts. Slice onions and chop garlic cloves.

Slice peppers in strips, discarding interiors. Mix these ingredients together with the salt in a large pan. Cover with ice cubes and mix together. Allow to sit for 3 hours in a cool place.

Drain completely. Add remaining ingredients and bring to a rolling boil. Pour into hot, sterilized jars and adjust lids. Process in a boiling water bath for 10 minutes.
