MIXED VEGETABLE CASSEROLE 
1 package frozen mixed vegetables, bring to a boil, cover turn off heat.

1/2 to 1 cup each, add celery, bell pepper, and onion. Drain vegetables, add celery, bell pepper and onion. Mix in 1 cup mayonnaise and pour in 8x8 pyrex casserole.

Top:

Crush 1 stack of Ritz crackers an mix with 1 stick butter, melted.

Optional: almonds and cheese may be added if desired.

Bake 30 minutes at 350 degrees or until top is brown.
