MIXED VEGETABLE CASSEROLE 
Cook 1 pound package mixed vegetables in salted water along with 1/3 cup chopped onions and 1 cup chopped celery. 1 can cheddar cheese soup, 3/4 cup mayonnaise.

Drain cooked vegetables, onions, and celery. Add soup and mayonnaise. Pour into baking dish. Melt 3/4 stick butter in pan. Crumble 1 package Ritz crackers in butter and spread over casserole. Bake in slow oven (350 degrees) until crumbs brown and casserole bubble around sides.
