MIXED VEGETABLE CASSEROLE 
2 (10 oz.) pkg. frozen mixed vegetables
1/2 c. (2 oz.) shredded lowfat process American cheese
1 (8 oz.) can sliced water chestnuts, drained
2 tbsp. chopped onion
2 tbsp. low-calorie mayonnaise substitute
Vegetable cooking spray

Cook mixed vegetables according to package directions, omitting salt and fat. Drain. Combine cooked mixed vegetables, cheese, water chestnuts, onion, and mayonnaise substitute, stirring gently. Spoon mixture into a 1 1/2 quart casserole dish coated with cooking spray. Bake at 350 degrees for 20 minutes or until thoroughly heated. Yield: 8 servings.

Each serving: 1/2 cup. Exchanges: 1 starch. 79 calories. 12 gm. carbohydrates, 4 gm. protein, 1 gm. fat, 1 gm. fiber, 177 mg. sodium, 4 mg. cholesterol.
