1 (8 oz.) can Coco Lopez (cream of coconut) 1 can condensed milk 1 can Carnation evaporated milk 5 eggs 2 c. sugar 1 tsp. vanilla extract Use a double boiler. Oven at 350 degrees - 1 hour. Make caramel by melting 1 cup of sugar and pouring it into the flan pan. Meantime mix all the rest of the ingredients on high speed in mixer. Pour the mix over caramel bottom and put in double boiler for 1 hour in oven. (Pan must be in water as for custard). For best results make the day before serving and keep in refrigerator overnight. Serve by turning over so caramel will be on the top. |
