RED CABBAGE WITH APPLES AND WINE 
1 med. head red cabbage
4 strips bacon, diced
1 onion, chopped
2 tsp. vinegar
1 c. red wine
2 green apples, peeled, cored, and chopped
Salt and pepper to taste

Core cabbage and remove tough outer leaves. Finely shred cabbage. Drop into boiling, salted water; cook for 10 minutes or until cabbage is wilted. Drain. In large skillet, fry bacon until crisp. Add onion and saute until golden. Slowly add vinegar, red wine, and cabbage. Cover and simmer for 30 minutes. Add apples and simmer, covered, for 30 minutes. Season to taste with salt and pepper.
