SPICY SAUSAGE AND POTATOES IN A
SKILLET
 
1 1/2 lb. mild Italian sausage, cut in 1 in. pieces
10 sm. new red potatoes, quartered
1/2 tsp. pepper
1/2 tsp. thyme leaves
1 c. sliced red onion
1/4 c. chopped fresh parsley
1 green pepper, cut into 1 in. pieces

In 10 inch skillet, combine sausage, potatoes, pepper, and thyme. Cook over medium high heat, stirring occasionally, until potatoes are browned (10 to 12 minutes). Reduce heat to medium low. Cover; cook until potatoes are tender (8 to 10 minutes). Stir in remaining ingredients. Continue cooking, uncovered, until vegetables are crisply tender (4 to 5 minutes).
