POTATO AND SAUSAGE SOUP 
12 Italian sausages, brown in skillet
1 lg. onion
2 (1 lb.) cans tomatoes
4 potatoes, diced
1/4 c. chopped parsley
1 c. sliced celery
1 1/2 c. water
2 beef bouillon cubes
1 tbsp. lemon juice
1 bay leaf
1/2 tsp. thyme
1/4 tsp. pepper

Brown sausage and onion in skillet. In medium large bowl combine all other ingredients. Mix together. Add sausage and onions. Simmer 1 to 1 1/2 hours.

We've made this several times and really like it but 1 1/2 cups water is not enough! We went to 2 cups and just today increased to a total of 3 cups of water with 3 bouillon cubes. We used petite diced tomatoes.
