BANANA MUFFINS 
5 large ripe bananas, peeled and mashed
1 egg
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
1/4 c. softened butter
2 1/2 c. flour

Preheat the oven to 375°F. Mix the bananas, egg, salt, baking soda, sugar, baking powder and butter. Gradually add the flour, stirring lightly. Pour the mixture into muffin tins and bake for 15 to 20 minutes until they are golden brown.
