BANANA NUT MUFFINS 
1 3/4 c. flour (OR 1 c. whole wheat flour, 1/4 c. flaxseed meal, and 1/2 c. oat bran)
1/2 to 3/4 c. brown sugar
1 tbsp. baking powder
3/4 tsp. salt
3/4 c. milk
1/3 c. canola oil
1 ripe banana
1/2 c. chopped walnuts

Preheat oven to 400°F. Combine dry ingredients. Puree banana in milk and oil. Add nuts and process until chopped. Add liquid to dry ingredients and stir. Fill lined muffin tins with batter and bake 20 minutes.

Yields 12 muffins.
