LOW CHOLESTEROL BANANA NUT
MUFFINS
 
2 1/4 c. oat bran cereal
1 tbsp. baking powder
1/4 c. brown sugar
1/4 c. chopped walnuts or pecans
1 1/4 c. skim milk
2 very ripe bananas (the riper they are the better)
2 egg whites
2 tbsp. vegetable oil

Preheat the oven to 425 degrees. Mix the dry ingredients in a large bowl. Mix the milk, bananas, egg whites, and oil in a bowl or blender. Add to the dry ingredients and mix. Line the muffin pan with paper baking cups and fill them with batter. Bake for 17 minutes. Makes 12 muffins. TIP: Serve with a banana milk shake.
