OATMEAL BANANA MUFFINS 
1/2 c. softened butter or oil
2 eggs
1 c. mashed bananas
1/2 c. honey
1/4 c. yogurt, plain or banana flavored
1 tsp. baking soda
1 1/2 c. whole wheat flour (pastry flour, if available)
1 c. rolled oats
1 c. chopped nuts (optional)

Combine butter or oil, eggs, bananas, and honey. Mix together yogurt and baking soda and add to first mixture. Cream well by hand or with mixer. Add flour, mixing just until blended. Stir in oats and nuts.

Fill greased muffin cups 2/3 full. Bake at 375 degrees for 20 minutes. Remove from pan and cool on wire rack. Makes 18 muffins.
