BANANA MUFFINS 
1/2 c. butter, softened
1 c. sugar
2 eggs, beaten
3 ripe bananas, mashed
1 1/4 c. all-purpose flour
1/2 tsp. baking soda

Combine butter and sugar; beat until light and fluffy. Add eggs, and beat well. Stir in bananas. Combine flour and soda and add to creamed mixture, stirring just enough to moisten the dry ingredients. Fill muffin pans 2/3 full. Bake at 350 degrees for 25 minutes or until done. Makes about 1 1/4 dozen.
