BANANA - BLUEBERRY MUFFINS 
4 tbsp. butter
1/2 c. honey
2 eggs
1 very ripe banana, mashed
1 1/2 c. buttermilk
1/2 tsp. salt
2 tsp. baking soda
3 c. whole wheat pastry flour OR
3 c. half whole wheat and half white flour
2 c. unsweetened blueberries

Cream butter and honey; add eggs, banana, and buttermilk, mixing well. Stir in flour, soda, and salt just until mixed. DO NOT over-mix; batter should be lumpy. Gently fold in blueberries.

Bake in greased and floured muffin tins at 350°F for 30 minutes.

Yields 1 1/2 dozen.
