SEVEN DAY SWEET PICKLE 
7 lbs. med. cucumbers
Water to cover
1 qt. vinegar
8 c. sugar
2 tbsp. salt
2 tbsp. mixed pickle spices

Wash cucumbers and cover them with boiling water. Let stand 24 hours and drain. Repeat each day for 4 days, using fresh water each time.

On the fifth day, cut cucumber sin 1/4 inch rings. Combine vinegar, sugar, salt, and spices. Bring liquid to a boil and pour over sliced cucumbers. Let stand 24 hours. Drain syrup and bring to a boil. Pour over cucumbers. Repeat 6th day.

On the last day, drain off the syrup again and bring to a boil Add cucumber slices and bring to boiling point. Pack into jars and seal. This is a very crisp pickle.
