SPICY BLACK - EYED PEA SOUP 
5 slices bacon, cut into pieces
1 c. chopped onion
1 can Rotel
1 can tomatoes
1 clove garlic, minced
pinch of salt
Dash of pepper
4 cans black-eyed peas
Cheddar cheese, grated

Saute bacon until lightly browned. Add onions, Rotel, tomatoes, garlic, salt and pepper, and continue to saute. Drain juice from cans of peas into large measuring cup, (juice should equal 3 cups, if not, add water to equal 3 cups.) Add peas and juice to saute mixture; heat. Sprinkle cheese on each serving. Serves 10.
