BLACK - EYED PEA SOUP 
1/2 lb. bacon, diced
2 c. chopped celery
2 c. chopped green bell peppers
2 c. chopped onion
2 cans (16 oz.) tomatoes, undrained
2 cans (16 oz.) black eyed peas
1 1/2 c. beef broth

In large saucepan, cook bacon; add celery, bell pepper and onion; saute until soft. Add tomatoes, peas and broth; simmer 30-40 minutes.

this is similar to mine. I use carrots instead of green pepper and less bacon (turkey). I did notice everyone else uses canned peas... I use a small bag of peas soak it overnight. Canned peas are full of salt and preservatives.
