BLACK - EYED PEA SOUP | |
1/2 lb. bacon, diced 2 c. chopped celery 2 c. chopped green bell peppers 2 c. chopped onion 2 cans (16 oz.) tomatoes, undrained 2 cans (16 oz.) black eyed peas 1 1/2 c. beef broth In large saucepan, cook bacon; add celery, bell pepper and onion; saute until soft. Add tomatoes, peas and broth; simmer 30-40 minutes. |
