CLASSIC QUICHE 
4 to 8 slices bacon, cooked and crumbled (optional)
2 or 3 tbsp. chopped onion or chives
1/2 to 1 c. steamed vegetables, well drained (broccoli, cauliflower, spinach)
Sliced sauteed mushrooms
1 c. grated cheese (Swiss or Cheddar)
4 eggs
1 c. milk or cream
Dash of salt
Dash of pepper
Dash of ground nutmeg
2 tbsp. grated Parmesan cheese

FRIED POTATO NESTS:

9 or 10-inch pie plate
3 c. grated, raw potatoes
3 tbsp. oil or melted butter

Preheat oven to 450 degrees. Toss ingredients for fried potato nest. Press into bottom and sides of pie plate. Bake 15 minutes or until golden.

Sprinkle bacon, onion, vegetables and cheese into potato nest. Combine eggs and milk until well blended. Add seasonings. Pour egg mixture over ingredients in potato nest. Sprinkle with Parmesan cheese. Bake at 350 degrees for 35 minutes or until knife inserted in center comes out clean. Cool 10 minutes before serving.
