IMPOSSIBLE QUICHE 
1 pkg. frozen spinach, thawed
1 c. shredded Swiss cheese
1/3 c. chopped onion (optional)
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1/4 tsp. salt
1/8 tsp. pepper

Heat oven to 400 degrees. Lightly grease pie plate, 9 x 1 1/4 inches. Sprinkle spinach (which you have pressed the water out of), cheese and the optional onion in the pie plate.

Beat remaining ingredients until smooth, 1 minute with hand beater or just a wire whip until mixture looks smooth. Pour evenly into pie plate. Bake until top is golden brown and knife inserted in center comes out clean, about 30 minutes. Let stand 5 minutes before cutting. Refrigerate any remaining pie. 6 servings.

Note: If using pie plate 10 x 1 1/2 inch increase milk to 2 cups, baking mix to 1 cup and eggs to 4. Also the recipe can be made with 12 slices bacon (about 1/2 pound) crisply fried and crumbled instead of spinach.
