VEGETABLE QUICHE | |
1 lb. fresh spinach or 10 oz. frozen 1/2 c. chopped onion 1 clove garlic 2 tbsp. butter 1 1/2 c. grated Swiss cheese (6 oz.) 3 eggs, beaten 3/4 c. milk 1/2 tsp. salt 1 tsp. basil 1/2 tsp. celery salt 2 tomatoes, sliced 1 tbsp. dry bread crumbs 1 tbsp. Parmesan cheese Pie shell Cook, drain and squeeze excess water out of spinach. Chop. Saute onion and garlic in butter. Add spinach and cook until it's dry. Combine first 10 ingredients and pour into pie shell. Arrange tomato slices on top. Bake at 425 degrees for 15 minutes and at 350 degrees for 10 minutes. Mix bread crumbs and Parmesan; sprinkle on top. Bake at 350 degrees, another 10 minutes. Let stand 10 minutes before serving. |
