CORN BREAD 
2 c. yellow cornmeal
1 c. finely grated carrots
3 tbsp. oil
1 tsp. salt
2 tbsp. natural sugar or 1 tbsp. honey
1 1/2 c. boiling water

Mix cornmeal, sweetening, salt and oil. Pour in boiling water. Add carrots and mix well. Pour into oiled pan and bake one hour at 450, then half an hour at 400.
