SQUASH CASSEROLE | |
4 to 6 med. yellow squash 1 med. onion 1/2 tsp. salt 1/4 tsp. pepper 15 to 20 Ritz crackers, crushed 1/2 stick butter 2 eggs, separated 1 c. grated cheese (or Velveeta, in sm. pieces) Slice squash and onion into small pieces. Cook until tender, about 20 minutes. Strain. Mash well with a fork. Drain off excess liquid. Add butter and cheese, blending until melted. Add crushed crackers, salt, pepper and egg yolks. Mix well. Fold in 2 stiffly beaten egg whites. Quickly turn into greased casserole dish. Bake at 350 degrees for 40 minutes. |
