SQUASH CASSEROLE | |
1 1/2 lb. yellow squash 1/2 c. butter 1 egg 1/2 onion, chopped Salt & pepper to taste 6 Ritz crackers, crushed 3/4 c. (2 wedges) Gruyere cheese, grated Boil squash, drain and butter. Beat egg and add. Add onion, salt, pepper and crackers. Place mixture in a buttered casserole. Sprinkle grated cheese on top and bake at 350 degrees until it bubbles around the edges, 20 to 25 minutes. Serves 5. |
