SQUASH CASSEROLE 
4 med. size yellow crook-neck squash
1 tbsp. onion
1 egg
1 c. grated cheese
1 c. crushed Ritz crackers
2 tbsp. butter

Slice squash. Boil in 1/2 cup of water and onion until tender (10 minutes). Drain and place in shallow baking dish. Beat egg and add to squash. Cover mixture with a layer of cheese, then a layer of crackers. Dot with butter. Bake at 350 degrees for 30 minutes or until crackers begin to brown.
