CHICKEN AND DRESSING CASSEROLE 
Boneless chicken (or leftover chicken from another meal)
1 pkg. Stove Top Stuffing Mix (chicken flavor)
1 can cream of mushroom soup
Grated cheese (whichever kind you prefer, I use mild Cheddar)

If you have leftover chicken, break it into bite size pieces. If you are using a small to medium package of boneless chicken, cook it in microwave until tender and then cut into bite size pieces.

Fix Stove Top Stuffing as directed on package.

Spray the bottom of a small casserole dish with spray shortening. Spread dressing in the bottom of dish. Lay pieces of chicken over dressing. Then spread the thick cream of mushroom soup (undiluted) over the chicken. Then top with lots of grated cheese. Warm in oven until bubbly. Serve with vegetable or salad (or both). Double if you need a bigger casserole. (It's easy and delicious too!)

Since microwave ovens vary in power, you may need to adjust your cooking time.

Added small cans of sliced mushrooms and chopped black olives (drained). Otherwise, followed recipe exactly. 15 minutes in preheated 350°F oven. Absolutely delicious. This is a keeper and the answer as to what to do with leftover chicken.

It would be nice to have some kind of reference for cooking time. Since I made this a couple years ago from a recipe I can't find, I had a rough idea how long to bake it.
