SQUASH CASSEROLE 
2 pounds small yellow squash
1 large onion

Cook together in small amount of water until tender and almost all water has evaporated.

Salt and pepper
1 stick butter

Mash slightly. Butter casserole well. Sprinkle with Ritz cracker crumbs. Add layer of squash mixture, then small amount of Ritz cracker crumbs. Repeat until all are used. Sprinkle with crumbs and grated cheese if desired. Bake at 350 degrees until brown and bubbly.
