SQUASH CASSEROLE 
1 lb. squash
1 1/2 c. grated cheddar
1/4 stick butter
1 chopped onion
12-16 Ritz crackers
1/4 c. milk
1 egg, beaten
Salt & pepper

Boil squash, onion, salt together in little water until tender. Drain and mash. Add cheese and butter while squash is hot. Add egg and milk. Crush crackers into crumbs and stir into mixture. Add pepper. Bake in buttered dish 20 to 30 minutes at 350 degrees.
