BLUEBERRY MUFFINS 
2 cups all-purpose flour
4 tsp. baking powder
1 tsp. salt
1 cup frozen or fresh blueberries
2 eggs
1/2 cup melted butter
1 cup milk
1/8 tsp. cinnamon
1/2 cup sugar

Preheat oven to 400°F.

Place paper cups in ungreased tins. Sift dry ingredients together. Add blueberries to dry and mix until well coated.

In small bowl, beat eggs, then add melted butter and milk.

Quickly stir liquid mixture into dry mix. Do not over mix.

Fill muffins cups 3/4 full.

Bake at 400°F for 20 minutes until lightly brown.

Love this recipe but made a couple of adjustments: add 1 tsp. of vanilla (gives it a richer flavor), fill the cups all the way, and top with cinammon-crumb topping (2 tbsp. of melted butter, 1/4 cup sugar, 1/4 flour and cinnamon to taste, mix together with fork and then put 1 tbsp. on top of each muffin and lightly press into batter), then bake as suggested.
