COTTAGE POTATOES 
10 cooked, cubed potatoes
1 chopped onion
1 sm. can pimentos
1 1/2 tsp. parsley flakes
6 slices cubed white bread
1/2 lb. cubed Velveeta cheese
Salt and pepper to taste

Mix all ingredients and place in casserole. Pour one cup butter (melted) and one cup milk over all. Bake 1 hour at 325 degrees uncovered. Makes a large dish. Cut in half for family dinner.
