CORNED BEEF ROLL - UPS 
Corn tortillas
Corned beef, thinly sliced
Vegetable oil

CHEESE DIP:

1 lb. Velveeta cheese
1 can Rotel, pureed (or 1 jar mild green chili salsa)

Soften tortillas by dipping briefly into hot vegetable oil. Place 1 to 2 slices of corned beef on tortilla and roll up, like a burrito. Fry in vegetable oil, browning slightly on both sides. Dip in cheese dip and enjoy!
