POTATO SALAD 
This is a recipe that has been passed down through my family for generations! Hope you enjoy it!

2 1/2 lb. potatoes (depending on how large of one you want to make)
4 hard boiled eggs
1 cup mayonnaise
1/4 cup sweet salad cubes (pickles)
1/2 medium yellow onion
1 tbsp. salt

Peel clean and dice up potatoes to about 1-inch. Clean again.

Put in big pot (medium heat) and cover till about 1 1/2 inch water over potatoes. Let the potatoes get tender (not falling apart). Drain. Let the cool off.

Meanwhile while you are waiting, boil 4 eggs. When the potatoes are done, pour them into a large bowl. Let them cool a little. Pour in the mayonnaise, mix well. Notice the potatoes if still hot absorb the mayo, therefore you may need to add more. Put in a 1/4 cup of sweet cubes - eyeball it. You may want more.

Dice your yellow onion. You can also buy your onion already diced. Add as much as you like. Tastes differ. Make sure you are stirring alot. Check your eggs, remove them cool them off. Peel them, and then take a fork and start mashing them. Rake them into the potatoes and stir.

Last but not least, SALT!

I substitute Dukes sandwich spread instead of mayonnaise. Works better for me!

This is the same recipe my mom passed down to us. One slight difference; at the end sprinkle with paprika.
