JES' EASY MEATLOAF 
2 lb. ground beef
1 large sweet onion, chopped
1 large green pepper, chopped
salt and pepper, to taste
2 eggs
3/4 cup crushed saltine crackers
3/4 cup milk

BROWN SUGAR GLAZE:

1 tbsp. brown sugar
3 tbsp. ketchup (Hunts)

Mix all ingredients in a bowl. According to how you like your meatloaf put in desired amount of crackers and milk. The eggs will help keep it together so make sure you put at least one in. Mixing with your hands is usually the best way to get everything even.

In another bowl mix sugar and ketchup (for the top of your meatloaf).

Put meat mixture in desired loaf pan. And put in preheated oven between 350 and 400°F.

When loaf is turning a nice brown color take out and spread glaze mixture on top and put back in the oven until finished (when internal temperature reaches 165°F on a meat thermometer). Total time is about 45 minutes.

Meal can be served with mashed potatoes, corn/green beans/peas and some nice sweet rolls.
